Cooking with Honey

Honey in baking acts as a sweetener.

It also has the important function of acting as a humectant to keep the product moist and soft.

Some of the better known honey recipes are baklava, cheesecake, honey cake, gingerbread and ’lebkuchen’ When replacing sugar with honey in recipes it is important to remember to use an equal amount of honey by weight but to reduce the quantity of liquid by 20%. Honey may also be used in sauces, dressings and as a basting sauce.
