Grades of Honey

The main grade of honey sold in South Africa is Choice. Although there is legislation for standard and industrial grade honey it is seldom, if ever seen for sale a retail outlets.  Clear choice grade honey means that it should be uniform in colour and clear if held up to a light. Its taste should be typical of honey derived from a particular floral source and without an objectionable aroma caused by overheating or smoke.

 It should not contain foam on the surface or contain visible particles. Some heating may be necessary to ensure sufficient clarity and shelf life.Raw honey has a lees stringent limit on particles as no heating is permitted for raw honey. Honey’s maximum moisture content is 18.6%. Choice grade creamed honey should have a uniform and clear colour and be free of particles.

Creamed honey is honey that has been ‘seeded’ with fine granules or stirred to break hard crystals – it has nothing to do with added cream.

Raw honey is honey, which has had no heat during processing and therefore may have fine particles of wax in it.  Raw honey generally granulates quickly and has a firm but smooth texture.  Heating any granulated honey will liquefy it. Other kinds of honey sometimes available are comb honey which may be sold in sections or as cut comb.

Chunk comb honey consists of comb honey suspended in liquid honey. Pollen honey should contain a 25% pollen content by volume.
